I think there's a negative lesson to be learned here-- the best Chinese restaurants are the ones that BREAK THE MOLD. None of those "China Garden" places is going to serve amazing food; they are all going to serve a more or less identical selection of decent but undistinctive Chop Sue and General Tso's chicken.

When the starfish gets so large and strong that you can call it an "industry" and describe patterns that are recognizable coast-to-coast, there's a worry that individual businesses within that industry are losing their individuality. This works out okay for Chinese food, since the Chinese restaurant in Old City isn't competing with the one in Germantown. But in other industries, this loss of individual voices could be devastating.

I should add that I don't think coworking is in danger of succumbing to this problem. But it's something to watch out for as starfishes grow larger and stronger.
